Royal Oyster - description of where the toxicity of the fungus grows

Oyster mushrooms resemble champignons or milk mushrooms in their appearance and taste, but the latter have a rougher flesh. Royal Oyster mushrooms have a more noble aroma and pleasant taste, which they receive during cooking. In Europe, they are considered one of the most delicious mushrooms.

Royal Oyster mushroom or Pleurotus eryngii is also called Steppe white fungus, Steppe Oyster mushrooms or Eringi.

Appearance

Steppe mushrooms have caps thick and fleshy, which can reach up to 8 cm in diameter, and sometimes about 25. In young oyster mushrooms, they have a convex shape with a mound in the center. In the process of maturation, the caps take the form of funnels or remain flat with uneven edges.

Smooth and slightly scaly in the center of the surface are painted in colors from light cream to dark brown. At the bottom are frequent wide cream or pinkish plates that go down the stem.

Leg
It has a cylindrical shape with a wider top and narrow bottom. The height of the mushroom stem is about 5 cm, and the thickness is not more than 2.5 cm. The location of the leg is central, relative to the cap.

The legs are white, elastic and dense. As the maturity of the fungus acquire greater softness or "cottoniness".

Growth of royal oyster mushrooms

This type of mushroom is common in countries of Southern Europe, Central Asian countries, North America and in the post-Soviet space. Under natural conditions, fruits grow on the ground. In industrial production uses a vegetable substrate.

For the breeding process to occur, cover soil must be used. Therefore, blocks with growing mushrooms are placed on top of a cover soil having a thickness of not more than 30 mm. In case of large scale production, the cover area is decontaminated using steaming using formalin. There are some features when growing steppe oysters, but the process is not difficult.

What do you need for breeding?

  1. A snag or log from a tree of deciduous breed (a beech, a hornbeam, an alder, a birch, a chestnut, a poplar, a willow, an oak), without rotting, but not earlier than 30 days after a felling.
  2. Wood must have a moisture content of at least 70%.
  3. The diameter of the log should be about 45 cm. There should be no knots on its surface.
  4. With the help of a drill, holes must be made in the wood.
  5. Seeding is required to engage in sterile gloves.

This is a valuable, high-quality type of mushroom with a high protein content of 15-25 percent. The content of valuable nutrients in them is close to dairy and meat products. Proteins are well absorbed by the human body. During the heat treatment of the product, their concentration increases significantly.

Ingredients:

  • Cheese - 180 g;

  • Dry white wine - 80 ml.

Sauce:

  • Wheat flour of the highest grade - 60 g;
  • Butter - 60 g;
  • Milk - 1000 ml;
  • Salt, pepper, nutmeg.

Cooking:

  1. Carrot cut into very thin and long straws.
  2. Stew carrots and onion cubes in a mixture of vegetable and butter for 20 minutes.
  3. On a large and spicy grated grate cheese.
  4. Oyster mushrooms cut into straws and add to vegetables in the pan for 5 minutes, cover with a lid. After this time, add the wine and simmer another 5 minutes. Spread out on a paper towel to remove excess fat.
  5. Fry the flour in a skillet and add butter to it, then pour in the milk and mix thoroughly. Bring to a boil and remove from heat.
  6. Put vegetables in a bowl and season with sauce. Mix well and put in cocottes. Sprinkle with grated cheese.
  7. Bake at 200 degrees for 15 minutes.

Contraindications and precautions

Mushrooms of any sort must be consumed in a heat-treated form for the reason that chitin is included in large quantities of fresh, which is poorly absorbed.

With care, they should be used as food for pregnant women and children under 12 years old.

The only contraindication for eating spring oyster mushrooms for food is individual intolerance.
