How to cook brisol at home

However, some dishes can be cooked at home. So you will not only be sure of the freshness of the ingredients, but also significantly save the family budget.

So what is brisol? The long-known term is not a specific dish, but rather a cooking technique. That is, "brizol" means to fry in an egg. Any piece of chicken or fish, fried in breading from an omelet, with a stretch can be called brizol. Brizol in the classical understanding of this layer is a thin piece of chicken or meat, previously repulsed and fried in breading from flour and eggs. In the classic recipe, minced meat is used, which is rolled out very thinly and is fried in an omelette. To understand what brisol is, you need to cook it!

For the preparation of traditional brizol we need meat. Some housewives use only beef, but the dish will be much more juicy and tasty if the beef is mixed in half with pork. In addition, we need some milk, eggs, vegetable oil and spices. You can start brisol with anything, but we prefer to cook brisol with cheese, mayonnaise, greens, pickled cucumbers and garlic.

  1. So, first we deal with minced meat. The total amount of meat should be according to the number of eaters. For example, we prepare three breezols for three persons. Then we need about 300 grams of minced meat. If we take pork and beef, then 150 grams of each meat, respectively.
  2. Add spices to the meat - salt, pepper, you can favorite seasonings. After that, the stuffing should be carefully repulsed to make it sticky and viscous.
  3. After that, beat three eggs (by the number of servings) with three tablespoons of milk. Add a little salt and pepper to taste.
  4. It's time to do the meat cakes. Divide the meat into three equal buns and place one lump in front of you on a cutting board.After that, you need to gently roll out the tortilla into a flat circle equal in diameter to your pan. You can do a little less. One thing is important - the cake for brizol should be very thin so that it can be easily wrapped. If the meat falls apart and does not roll out in a circle, do it through food wrap. Simply spread the meat in a flat surface with a rolling pin right under the film.
  5. Put on the fire to heat the pan. Pour some vegetable oil. After that, pour into the pan a third of an omelet - beaten eggs with milk. Immediately, before the egg is baked, put the scone in the pan. Fry the minced meat in an omelet until golden brown.
  6. When all the cakes are ready, proceed to the preparation of the filling. Mix five tablespoons of mayonnaise with a clove of chopped garlic, green onions and coriander. Stir the mixture thoroughly, add salt and pepper. If you do not like mayonnaise - you can use kefir or yogurt instead. Pickled cucumbers should be cut into strips, grated cheese grated.

This French dish allows for variability and the use of various meats as a base. In this recipe you will learn how to make fish brizol. For the preparation of this dish we need fish fillet or minced fish. It is best to take for this sea fish - it has fewer small bones that can spoil your mood.

Fillet of sea fish should be cut into thin cubes, salt and pepper. Cook omelet separately - mix eggs with a small amount of milk and greens. Put the fish pieces in the pan so that they are not on top of each other, but form a thin layer. After that, immediately fill the fish with omelet. When the omelette is reddened, turn it over and fry on the reverse side until cooked. For fish brizole, kefir filling with greens and lemon juice is best suited. In the same way, instead of fish, you can use any other seafood. Such breezols are not only very tasty, but also easily digestible.
