Govorushka is the name of a large order of mushrooms, in a large number of common in the temperate latitudes of Russia. The squad includes a huge variety of edible species, but unpleasant taste and even poisonous mushrooms are also found.

Voronchataya tongue or Clitocybe gibba (in Latin) is a conditionally edible fungus (category IV for use in food) from the Tricholeceae family (Ryadovkov) of the Govushek genus. It prefers mixed, but mostly deciduous forests, grows well in symbiosis with oaks and pines. Grow in piles on the bedding of trees, sometimes forming circles. Most common in the temperate climate of Russia, Canada, and the territory of some European countries. The season of "quiet hunting" govorushku lasts from June to October.

There are several other names for this fungus, which differ depending on the place of growth: hare ears, fragrant or fragrant govorushka, funnel fungus, funnel. It is not known for certain why the mushroom received such a “speaking” name, but there are several versions on this subject.

Of course, the mushroom can not talk and make any sounds, although it is this idea that visits in the first place. Presumably, the nickname “talker” nevertheless originated by association from the phrase “speak quickly, often chatter”, since the fungus is often found, quickly gathers and grows in groups.

Another version, more believable, sounds like this: the mushroom is edible only after a long cooking - “varushki”. This was previously the true name, but over time the “varushka” transformed into a “govorushka”, that is, the mushroom as it were said: cook and then eat. However, both versions are only hypotheses of linguistic scientists, not confirmed by anything.

The appearance of the fungus

Fragrant is a small mushroom shaped like a funnel or a glass. The cap has a concave appearance with rough, raised to the top edges, dry to the touch. Its diameter reaches 8 cm.The hue varies from pale yellow to yellowish brown.

The pulp of the talker funnel is light, thin, slightly compacted towards the center of the cap. It has a peculiar smell like pineapple. White, often located plates descend to the foot. The fungus spore powder is also white.

The leg grows to 7 cm, in diameter - about 1 cm. The pulp of the leg is hard and fibrous. Its color coincides with the shade of the cap, or a little lighter.

This type of fungus is known for its low calorie content, it is often used as an ingredient in dietary nutrition. Gingerbread odorous is rich in vitamins, microelements and amino acids, contains fiber in excess. The correct combination of these substances in the mushroom brings great benefits to human health. Immediately before cooking, the talker is thoroughly cleaned of debris, washed and left for a short time in the water to the master block. Like all mushrooms, they can be salted, pickled, dried and frozen for long-term storage. However, it should be noted that all these procedures should be carried out after a long cooking. If it was decided to marinate the mushrooms, it is imperative to use a strong vinegar marinade.

The specific flavor of the govorushek and the long cooking process significantly limit the variety of possible dishes. This type of mushroom is not quite suitable for soups and cream sauces, does not fit well with fish and poultry. But in harmony with fried and boiled vegetables.

The use of mushrooms is extremely contraindicated for people with stomach disease, children under 12 years old and allergies.

Twin Mushrooms

Adult govorushki difficult to confuse with other mushrooms - they are colored yellow and have a characteristic goblet shape. However, only young specimens are suitable for food. During this period of growth they are easily confused with other fungi.

There are some types of inedible and poisonous govorushek, much like edible funnel fungi. One of these doubles is whitish govorushka. This is a very poisonous mushroom, after its use is inevitable fatal. Habitat, place and time of collection from a whitish govorushka is absolutely identical to an odorous govorushka. We must be very careful and attentive. Even with small doubts, it is better not to cut the mushroom.

This fungus is much less described, has a grayish-white! Colour.The main distinguishing feature is that a powdery powder on the cap is required.

Other types of talkers are also similar to each other, but if you prepare them using the rules described above, nothing critical will happen. This is a giant, slightly smelly and winter talker.
